I surprised myself with this one. I really did. And I’m finna tell you why.
See, this recipe I didn’t look up. I just kind of remembered how my mom used to make chicken salad or tuna salad and then put a lil vegan spin on it and made my own.
But that’s not why I was surprised.
I was surprised because I deadass thought I was eating chicken for a second.
You read that correctly. I thought I was eating chicken.
On the real. That’s never the goal for me. I don’t make dishes wit the intentions of trying to make it taste like meat. That shxt trash to me. In my opinion it don’t really make sense to be vegan if you always tryna recreate the taste of meat. Just go eat meat my guy. Stop suffering.
But in this instance I had to remind myself what I made this out of and I was like “oh yeah this is vegan I’m good.” That’s probably the only time I’ve made something I thought tasted like meat. But now it’s time to describe how.
The texture of the chickpeas ends up resembling cooked chicken because of them being mashed. This is a similar to what you’d find in most mock chicken salads made out of soy nuggets.
Overall this is definitely a favorite. It’s not too hard to make and it’s something that can be packed for lunch for both adults or children. And for anyone worried about protein; chickpeas are high in protein.
Lastly, this don’t have to be eaten like a salad. You can be creative and put it on some bread and now you got a sammich. You’re welcome.
- 1 1/2 cups of chickpeas
- 1 1/2 cups of grapes
- 1 jar of veganaise
- 1/2 cup of cashews
- 3 scallions
- 1/2 red onion (diced)
- 1 package of spiral pasta
- Soak Chickpeas overnight
- Cook chickpeas for about 30-45 minutes (should be able to smash them with your fingers)
- Cook spiral pasta for 10-11 minutes (according to package)
- Dice half of red onion
- Thinly chop scallions
- When chickpeas are finished cooking drain them and put into separate mixing bowl
- Mash the chickpeas until they are primarily soft
- Add diced red onions and scallions into a mixing bowl
- Add mashed chickpeas to mixing bowl
- Wash grapes and slice them in half
- Add grapes to bowl with scallions, red onions, and chickpeas
- Season the mixture with salt, pepper, and paprika
- Add pasta to the bowl
- Use full jar of veganaise and add to the bowl
- Mix thoroughly ensuring veganaise is distributed evenly throughout
- Season again with salt, pepper, and paprika
- Garnish with cashews prior to serving
- Eat that Shxt!
